From the dinner table to the everyday of a place.
Cuisine embodies a land's climate, history, industry, and the wisdom of its people. Within Japan, what you find on the table differs vastly between coasts and mountains, cities and villages—in ingredients, cooking methods, and the very rhythm of shared meals. Food is one of the most accessible and rich doorways to understanding a region.
We don't offer gourmet tours of famous restaurants. Instead, we walk markets, meet producers, hear from cooks, and sometimes share tables with locals. Rather than asking "what did we eat?" we explore "who made it, why, and how?" When you know this, a single dish becomes the story of your journey.
